Description

Finca El Diviso coffee is what happens when a Colombian farm stops playing it safe. This is a single farm lot from Huila, not a regional blend, processed anaerobically, and it barely tastes like conventional Colombian coffee. If you have been drinking balanced washed Colombians your whole life and want to know what the noise about modern processing is about, start here. We roast it to order in Concord, California, on our Buckeye roasters.

What Finca El Diviso Coffee Tastes Like

An explosion of red fruit in every sip, carried on a creamy mouthfeel that gives all that brightness something to sit on. Finca El Diviso coffee does not whisper.

Our house cupping notes run long because there is a lot happening: guava, strawberry, kiwi, plum, star fruit, banana, and white grape. The fruit is not subtle and not an afterthought. It is the entire point. The finish is clean and sweet rather than sharp, and the body carries more weight than the brightness suggests.

  • Origin and Farm: Colombia. Finca El Diviso, a single farm lot
  • Region: Huila
  • Altitude: High, as is typical for Huila

  • Body: Creamy and syrupy
  • Acidity: Bright, fruit driven, not sharp
  • Best For: Pour over, drip, and a wild fruit forward espresso

What Anaerobic Fermentation Does to Finca El Diviso Coffee

Here is the plain language version. After picking, cherries have to ferment so the fruit and mucilage come off the seed. In a washed process that happens in open tanks with air around, and the microbes doing the work are the ones that like oxygen. The result is the clean, balanced, familiar Colombian cup.

Anaerobic fermentation seals the cherries in tanks with the oxygen shut out. Different microbes take over, work at a different pace, and throw off different compounds. Chief among them are fruit esters, the same family of aromatics that make a ripe strawberry smell like a ripe strawberry. Those esters soak into the seed. You cannot get them from a washed process no matter how carefully you run it.

Two things. First, this is a deliberate modern processing choice, planned and monitored, not a defect or a batch gone wrong. Farms doing this track time, temperature and pH the whole way. Second, it is exactly why this Finca El Diviso coffee tastes nothing like a classic Colombian.

Want the contrast? We also sell Colombia Supremo, though note that one is unroasted green coffee for home roasters, not a roasted retail bag. It is the classic washed Colombian profile in raw form. For background on the country’s industry, Wikipedia covers coffee production in Colombia well.

Why We Roast Finca El Diviso Coffee Medium

Medium, on purpose, and this is where it matters most.

Anaerobic fruit character is the first casualty of a dark roast. Those esters are volatile. Push a coffee like this into second crack and the guava and strawberry are gone, replaced by roast flavor and bittersweet char that would taste the same off any farm in the world. You would be paying a premium for processing you then destroyed in the drum.

Medium develops the sweetness and fills out that creamy body while leaving the fruit intact. If roast levels are still fuzzy for you, our guide to choosing the perfect roast is a straightforward read.

Roasted After You Order

We do not roast in advance and hope somebody buys it. Your bag is roasted in a small batch after your order comes in, ships within 72 hours, and carries a roast date.

Freshness is not a marketing line here. Coffee is at its best between 7 and 21 days off the roast, and the aromatics that make Finca El Diviso coffee worth the price fade first. A bag sitting in a warehouse for four months is a duller coffee.

We roast about 25,000 pounds a year on two Buckeye roasters at 1717 Solano Way in Concord, California. Family owned since 2021, FDA registered, open to the public, 5.0 across more than 180 Google reviews. Stop by the roastery.

How to Brew It

Pour over or drip is the sweet spot for Finca El Diviso coffee. Both give the fruit room to separate out so you can pick the notes apart instead of getting one blurry sweet impression.

Order whole bean. Ground coffee loses aroma in days, and aroma is most of what you are buying here. No grinder? Tell us your brew method at checkout and we will grind to match. Our grind size guide explains why that setting changes the cup so much.

Start around 1:16, roughly 22 grams of coffee to 350 grams of water, then adjust. Drink it black the first time. Cream and sugar bury the fruit, and you paid for the fruit. Our perfect brew guide covers temperature and timing.

One more thing. If you like a fruit forward shot, this pulls a genuinely wild espresso. It will not taste like a traditional Italian style shot and is not trying to. Expect bright, jammy, and loud.

Which Size Should You Buy

Finca El Diviso coffee comes in two sizes.

  • 6 oz Bag, $16.00. The right starting point if you have never had an anaerobic coffee. Enough to brew it a few ways and decide whether the style is for you.
  • 12 oz Bag, $30.00. For people who already know they want this, or anyone splitting it with a household. About three weeks for one drinker, inside the freshness window.

It also sits in our premium single origin selection.

Frequently Asked Questions

What is anaerobic fermentation?

Cherries are sealed in tanks with the oxygen shut out during fermentation. Different microbes take over than in an open air washed process, producing intense fruit esters that soak into the seed. A deliberate, controlled method, not a defect.

Will this taste like regular Colombian coffee?

No, and that is the point. A classic washed Colombian is balanced, nutty and clean. This is loud red fruit with a creamy body. If you want the traditional profile, this is not your bag.

What roast level is it?

Medium. Dark roasting destroys the anaerobic fruit character, which is the whole reason to buy this coffee.

Can I pull espresso with it?

Yes, and worth trying if you like a fruit forward shot. Bright and jammy rather than classic and chocolatey.

How fresh will it be?

We roast after you order and ship within 72 hours with a roast date on the bag. Drink it 7 to 21 days off roast.
