3. Rinse a paper filter in the cap, screw it on, and set the chamber on your mug.
4. Add the coffee and level the bed by tapping the side. Look through the wall. A flat bed is what you want. A sloped bed will channel.
5. Pour 60 grams of water and stir ten seconds. You should see the bed swell and hold. If it does not rise at all, your coffee is stale.
6. Fill to 250 grams, which is roughly a 1 to 15 ratio, stir twice, and insert the plunger to seal.
7. At one minute, press slowly. Thirty seconds of steady push. Watch the water line drop at an even rate.
8. Stop at the hiss. Everything past the hiss is bitter and you can see exactly when you get there.
