How to Brew With the Pure Over Brew Kit XL

This is a hybrid. Water immerses the grounds for part of the brew and drips through for the rest, so the recipe is not identical to a standard cone. Read the grind note first, because that is where most people go wrong on their first try.

1. Grind 36 g of coffee at medium coarse. The maker calls for medium coarse for adequate filtration, and they are right. Coarse sand, not table salt. Grind too fine and the fines pack down and stall the drawdown. Our grind size guide shows what that looks like.
2. Assemble the dripper on the base and set it over the carafe. Rinse everything with hot water first. Glass pulls heat out of a brew fast when it starts cold, and rinsing solves that in five seconds.
3. Heat about 560 g of water to 200F to 205F. At the hotter end you get more clarity and more acidity. Nearer 198F you get a rounder, softer cup. Pick based on the coffee.
4. Add the grounds and bloom with 70 g of water. Use the stir stick to make sure every ground is wet, then leave it alone for 45 seconds. That hiss is carbon dioxide from roasting escaping the beans, and until it clears it keeps water from soaking in evenly.
5. Put the diffuser lid on and pour the rest steadily. The lid spreads the stream so you do not have to have perfect pour technique. Keep the level under the rim and let it work down.
6. Give it one gentle stir near the end, then let it drain. Total brew time runs longer than a paper cone, around four to five minutes, because the coffee bed is doing the filtering.
7. Swirl the carafe and pour. Compost the grounds, rinse the dripper under the tap, and you are done. No filter to peel out and throw away.

From behind the roaster, this is the most interesting brewer on our shelf, because it sits between two methods we normally treat as opposites. Paper strips oils and fines and gives you a transparent cup. A French press leaves everything in and gives you a heavy, muddy one.

The Pure Over Brew Kit XL lands in the middle. Some coffee oils and a little microfine sediment pass through, so the body is fuller and the mouthfeel is smoother than a paper cone.
