What Is Instant Coffee?

How Instant Coffee Is Made
- Selecting and roasting the beans: like regular coffee, it starts with beans — often Robusta, for its higher caffeine and stronger flavor — which are roasted to develop flavor.
- Grinding: the roasted beans are ground, usually finer than for traditional brewing (see our grind size chart).
- Brewing: the grounds are brewed in large industrial machines to produce a strong, concentrated extract.
- Drying: the extract is dried one of two ways — spray drying (sprayed into hot air to dry instantly into powder) or freeze drying (frozen, then vacuum-treated so ice sublimates away, leaving granules that preserve more flavor and aroma).
- Packaging: the dried coffee is sealed in jars, tins, or single-serve packets for freshness.
